Happy #FoodieFriday, everyone! I hope you have had a wonderful week and are excited to celebrate Halloween this weekend.
For the last two weeks, I’ve been eating an ovo-vegetarian diet, which means no animal products except for eggs. Why? I’m in a financial pickle at the moment and decided to cut out all meat products since they cost the most amount money. Not to mention, my go-to poultry store (St. Andrew’s Poultry) in Kensington Market closed down, so I skipped out on buying chicken. This place was amazing; ONE pound of ground organic, local, free run ground chicken costed $5. You can’t buy that in any grocery store for that price.
However, this will change after the weekend because I’m starting my new meal plan on Monday, courtesy of my Holistic Nutritionist in-training and dear friend, Monika. I will share a couple recipes from my plan at a future date.
I decided to go with chickpeas since they’re a high source of protein (1 cup = 15g of protein) now, it’s important to eat these with another kind of protein because they don’t contain all of the essential amino acids. They’re also a great source of fibre and maganese (helps with bone development) and folate (cell growth to prevent cancers).
Sweet potatoes are my favourite. Not only are they inexpensive, they contain beta carotene (antioxidant that wards off cancer, anti-aging), vitamin B6, vitamin C & D, iron, and magnesium. I could eat sweet potatoes for days and never get tired of them.
*side note: sweet potatoes with drizzled peanut butter tastes like cake and heaven*
- Preheat oven to 350
- Peel and dice sweet potatoes and make a layer in a baking pan
- Cut up other veggies and put on top
- Open can of chickpeas and add as the final layer
- Add any spices
- Bake for 45 minutes, until sweet potatoes are soft
