My homemade healthy Cabbage Rolls

I invited two of my brothers over for dinner the other evening. I’ve been wanting to try out a healthy alternative to my mom’s Cabbage Rolls recipe for quite a while. Since I wasn’t able to take some of hers home with me this year, I cooked these up myself.


The normal recipe called for a filling of ground beef/pork with rice, however, I decided to make it with quinoa and ground turkey instead. This instantly upped the nutritional value.

My filling recipe

  • 1 pkg ground turkey
  • 2 cups quinoa (or around there)
  • ½ onion chopped
  • spices

As for the cabbage, I messed up the coring part, so my leaves didn’t turn out so well. I cut the end off and tried to rip the leaves off. The majority of the leaves broke, but I still used them. My mom told me to slice off the spine of the leaf, so it wouldn’t be as tough to eat.

While I was doing that, I had some water boiling in a large pot and boiled a leaf or two at a time, then they went into cold water to cool. This isn’t the proper way to boil cabbage, but it still worked.

After the cabbage leaf cooled, I took a nice helping of the filling mixture and put it on the leaf, as shown.

20141223_205404-1 Next I poured some tomato sauce on top; the brand is your choice. If you want to go to the extreme, then I’m sure you can crush the tomatoes yourself and do it that way.

Cook these in a 350 degree oven for 1h 45 – 2 hours.
The result? The guys loved them. One said they were ‘divine’. I suppose I’ll hang onto this recipe and cook these again.
